INGREDIENTS (makes 9 small balls):
- 1/2 cup unsweetened dessicated coconut
- 1/4 cup melted coconut oil
- 2 – 4 tbsp liquid sweetener of choice, to taste
For the raw chocolate coating:
- 3 tbsp melted coconut oil
- 3 tbsp raw cacao powder
- 3 tbsp liquid sweetener of choice
Mix together the ingredients for the filling in a small bowl then pop it in the freezer for 5 minutes to firm up slightly (this will make it easier to mould into balls). When the 5 minutes have elapsed remove the bowl from the freezer and form 9 small balls, each slightly larger than an average-sized cherry. Place them back in the freezer on a small plate and take out after another 5 or so minutes.
Mix together the ingredients for the chocolate coating. Dip one of the balls in the chocolate mixture and roll it around, making sure it’s completely covered. Repeat with the rest of the coconut then place them back into the freezer on the small plate they were on before. Leave them in there for about an hour, then transfer them into an airtight container and either continue to store them in the freezer or keep them in the fridge.
